The easiest thing I can suggest is to purchase a market guide, such as the book I edit called Novel & Short Story Writer’s Market. I research every book publisher listed in our book and I will not list any subsidy or self-publishers.
If you’d rather do the research yourself, look at the publishers of the books you buy in your local bookstores. It’s very difficult for a self-published or subsidy-published book to make it onto the shelves of a big bookstore like Barnes & Noble or Borders, so it’s a pretty safe bet that the books you find there were published by traditional houses.
